Waffles by Michel Roux




If you want something really special for breakfast or just a quick and yummy dessert, there is nothing better than waffles! And those are one of the best I have ever had.. soft and fluffy in the middle and crunchy on the outside, delicious with jam and whipped cream.


Ingredients:
  • 160g plain flour (I used self-rising)
  • 15g caster sugar
  • pinch of salt
  • 2 eggs
  • 270ml milk
  • 50g unsalted butter, melted
  • 1/2 tsp vanilla extract
Melt the butter in a small saucepan and set aside.

Combine flour, sugar, salt, egg yolks and milk.  Add melted butter and vanilla extract and mix until smooth. Set aside.

In a separate bowl whisk the egg whites until stiff and gently fold into the mixture, keeping as much air in as possible.  

Pour the batter onto the hot waffle maker and bake until golden brown.

Serve with jam, icing sugar or whipped cream.
