Rice bran cookies with coconut and rose marmalade



When I was a child, my mum got this recipe from her friend, and all our family loved it straight away.  This cookies are incredibly easy to make and so delicious!


Ingredients:
  • 200g soft unsalted butter
  • 180g rice bran
  • 5 tbsp desiccated coconut
  • 1 glass caster sugar
  • 3 large or 4 small eggs
  • 1tsp baking powder (use gluten-free baking powder, for gluten-free cookies)
  • 1tsp vanilla paste or extract
  • 1 jar of hard rose marmalade
Beat the butter with sugar and vanilla.  Add the eggs, one at a time and mix between each addition.  Add all other ingredients (apart of the marmalade) and mix until well combined.  

Shape into walnut-sized balls, then place on a lined baking sheet and press slightly with your hand.  Place a tablespoon of marmalade on top of each cookie.

Bake in a pre-heated oven at 180C for about 15 minutes, until golden brown. Take out the oven and leave to cool.

This recipe makes about 14 cookies.
