Wholemeal banana pancakes

Delicious, made with healthy wholemeal flour and chunky pieces of banana.  Best served with honey or golden syrup.

Ingredients:

  • 1 glass wholemeal self-rising flour (or plain wholemeal flour)
  • 1/2 tsp baking powder (or 1tsp if plain flour used)
  • 1tbsp honey
  • 1/2 tsp cinnamon
  • 1tsp vanilla paste or extract
  • 1 egg
  • 1 large or 2 small bananas
  • 1/2 glass of milk
Additionally:
  • vegetable oil for frying
  • honey to serve

Mix flour with baking powder and cinnamon in a bowl and set aside.
In a separate bowl lightly whisk milk, egg, honey and vanilla and pour into dry mixture. Mix until smooth.
Roughly chop or slice a banana, make sure  the pieces are not too small.  Add to the batter and mix until combined.
Heat couple of tablespoons of oil in a large frying pan, then pour the batter on to the pan with a large spoon.  When bubbles start to form on the top of the pancakes, flip each pancake over and fry until golden brown and cooked through.
Serve warm with honey or syrup.

Enjoy!

French crepes with orange blossom water

Very delicate and soft, with tangy orange blossom sauce- perfect for dessert or breakfast on a summer day.  Crepes can be served with jam or other fruit instead of oranges.  I absolutely love them- hope you will too!  Recipe by Michel Roux.

Ingredients:

For the crepes:

  • 125g plain flour
  • 15g caster sugar
  • pinch of salt
  • 2 eggs
  • 325ml milk
  • 100ml double cream
  • few drops of orange blossom water
  • butter for frying
For the sauce:
  • 10 oranges
  • 100g icing sugar
  • 125g butter
Mix the flour, sugar, salt, eggs and a third of milk to a smooth batter.
Add rest of the milk and the cream and whisk until combined, then leave in a warm place for about an hour.
Before frying, stir in the orange blossom water.
Brush a small frying pan (20cm) with butter, then place over a medium heat.
Pour a ladleful of the batter onto the pan and fry about one minute on each side.
Repeat until all batter has been used.

To make the sauce squeeze the juice of 6 oranges and pass through a sieve.  Place in a saucepan with icing sugar and boil until reduced by half.
Take off the heat and add the butter a little at a time.

Cut remaining four oranges and use them to garnish the crepes, serve with orange sauce.

I used raspberries instead of additional oranges on top.

Enjoy!

American pancakes

Recipe for the best, fluffy, buttery pancakes.  Perfect for breakfast- with syrup, jam or bacon.

Ingredients:

  • 270g self-rising flour
  • 2tsp baking powder
  • 1tsp salt
  • 4tbsp caster sugar
  • 260ml milk
  • 2 eggs
  • 4tbsp melted and cooled butter
  • oil for frying
  • maple syrup to serve
Melt the butter in a small pan and set aside to cool slightly.
Mix the flour, baking powder, salt and sugar in a bowl.
In a separate bowl whisk the eggs and milk, then add melted butter.
Pour the wet mixture into dry ingredients and beat until well combined.
The batter should be very thick  and smooth.  Let it rest for couple of minutes.
Heat some oil in a large non-stick pan then pour  the batter in with a large spoon.
When pancakes are well risen and the top of the pancake begins to form bubbles, turn over and cook until both sides are golden and the pancake is cooked through.
Repeat until all the batter is used up.
Serve with maple syrup.

Enjoy!
