Buttermilk pancakes

The lightest and fluffiest pancakes I have ever tried! Buttermilk gives it amazing texture and flavour, best served with fresh fruit or syrup. Perfect breakfast.


  • 250ml buttermilk
  • 1 egg
  • 175g plain flour
  • 1/2 tsp bicarb. of soda
  • 25g caster sugar
  • oil for frying
Beat an egg with buttermilk and add flour.  Mix until well combined and smooth, then add sugar and bicarb. of soda.
Fry on a hot pan for couple of minutes on each side until golden brown.
Serve with fruit or syrup.


Serves 2-3
