Ginger and dark chocolate cookies



There is something about this cookies that reminds me of Christmas... spicy ginger, hint of cinnamon and layer of  dark chocolate- perfect.

Ingredients:


  • 2 1/3 cup plain flour
  • 3tsp ground ginger
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 2tsp bicarb. of soda
  • pinch of salt
  • pinch of black pepper
  • 1/2 cup caster sugar
  • 1/2 light brown sugar
  • 1 cup butter in room temperature
  • 1 egg
  • 3tbsp honey
  • 85g dark chocolate chips
Mix flour, all spices and bicarb. of soda in a bowl.
In a separate bowl whisk butter with sugar, honey and an egg. 
Add the mixture to dry ingredients and mix, only until combined.
Shape walnut sized ball and press slightly onto the baking sheet.
Bake at 180C for about 10-15 minutes.
Leave to cool.

Melt dark chocolate and spread on the bottom of each cookie. Leave upside-down to set.
You can place the cookies in a freezer for about 10 minutes, before spreading the chocolate, this way the chocolate will set instantly.
