Wholemeal banana pancakes


Delicious, made with healthy wholemeal flour and chunky pieces of banana.  Best served with honey or golden syrup.  

Ingredients:

  • 1 glass wholemeal self-rising flour (or plain wholemeal flour)
  • 1/2 tsp baking powder (or 1tsp if plain flour used)
  • 1tbsp honey
  • 1/2 tsp cinnamon
  • 1tsp vanilla paste or extract
  • 1 egg
  • 1 large or 2 small bananas
  • 1/2 glass of milk
Additionally:
  • vegetable oil for frying
  • honey to serve

Mix flour with baking powder and cinnamon in a bowl and set aside.
In a separate bowl lightly whisk milk, egg, honey and vanilla and pour into dry mixture. Mix until smooth.
Roughly chop or slice a banana, make sure  the pieces are not too small.  Add to the batter and mix until combined.
Heat couple of tablespoons of oil in a large frying pan, then pour the batter on to the pan with a large spoon.  When bubbles start to form on the top of the pancakes, flip each pancake over and fry until golden brown and cooked through.  
Serve warm with honey or syrup.
