Chocolate fudge cake

Extremely chocolatey cake with dark chocolate ganache, elegant dessert for special occasions… and how easy it is to make!

Ingredients (makes 14 slices):

For the cake:
  • 1 1/2 cup plain flour
  • 1 cup caster sugar
  • 1 tsp baking soda
  • pinch of salt
  • 1/3 cup cocoa powder
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
For the ganache:
  • 300ml double cream
  • 300g dark chocolate
To decorate:
  • fresh raspberries
  • icing sugar
  • cocoa powder

To make the cake combine all dry ingredients in one bowl and all wet in another, then mix together until the mixture is smooth.

Pour into a lined 20cm x 20cm cake tin, bake in a pre-heated oven at 180C for 20-25 minutes, until skewer inserted in the middle comes out clean.

When the cake is ready take out the oven and let it cool in the tin.

To make the ganache boil cream, then pour over chopped chocolate, stir until melted. 

Pour the ganache over the cake (keep in the tin), then place in the fridge to set over-night.

Cut the cake into rectangles, then decorate with cocoa powder, icing sugar and raspberries.
