Addition of cider in this cake makes it so light and moist it melts in your mouth.. and the glaze makes it even more chocolatey! One of the easiest bundt cakes on the blog!
Ingredients:
For the bundt cake:
- 5 eggs
- 310ml vegetable oil
- 380ml strawberry cider
- 625g plain flour
- 2 1/2 tsp baking powder
- 1 1/4 tsp bicarb. of soda
- 1/2 cup dark brown sugar
- 1 3/4 cup caster sugar
- 80g cocoa powder
- 1tsp vanilla extract
For the glaze:
- 130g dark chocolate
- 30g unsalted butter
Combine all wet ingredients in a large bowl and set aside.
Sift all dry ingredients into a separate bowl, then add to the wet mixture and mix just until combined.
It is important not to over-mix the batter.
Pour into a greased and floured 3L bundt tin and bake in a pre-heated oven at 160C for about 70 minutes until skewer inserted in the middle comes out clean.
Take out the oven and leave to cool in the tin four about 10 minutes, then carefully turn out and leave to cool completely.
To make the chocolate glaze place chopped chocolate and butter in a saucepan over low heat until melted. The mixture should be thick but easy to pour and very glossy. Pour over the cake and leave to set.
