Strawberry crumble

I love strawberries and I want to use them in everything… especially in baking!  Having some fresh strawberries I decided to make a wholemeal crumble and it is so delicious!


For the filling:
  • 450g strawberries
  • zest of one lemon
  • 1tsp vanilla paste
  • 1tbsp corn flour
For the crumble:
  • 3/4 cup plain wholemeal flour
  • 1/4 cup caster sugar
  • 80g cold, unsalted butter
  • 1tsp cinnamon

Place all filling ingredients in a bowl, stir together (be careful not to mash the strawberries) and transfer into a pie dish. 

To make the crumble place all ingredients in a bowl and rub with your fingertips until the mixture resembles bread crumbs.  

Top the strawberries with the crumble mixture and bake in a pre-heated oven at 190C for about 30-35 minutes.
