Chorizo & roasted pepper muffins


Those delicious savoury muffins are perfect for lunch or snack.  Best while still warm, but stay fresh for a few days. Enjoy!


Ingredients:

  • 2 eggs
  • 220ml milk
  • 120g grated cheddar
  • 1tsp salt
  • 75ml vegetable oil
  • 80g grated courgette/ carrot/ butternut squash
  • 250g plain flour
  • 1 1/2 tsp baking powder
  • 1tbsp fresh thyme
  • 2tsp dried mixed herbs
  • 1/2 small red onion
  • 1/2 cup chorizo 
  • 1/4 cup roasted red peppers
  • 1tsp sweet paprika
  • pinch of salt
  • cheese for sprinkling
Combine all ingredients in a large bowl, mix until combined. 
Divide the mixture into lined muffin cases and sprinkle with cheese. 
Bake at 180C for about 45 minutes, or until skewer inserted in the middle comes out clean.
