Raspberry muffins




The easiest recipe for raspberry muffins- absolutely foolproof and very quick.  The recipe comes form goodtoknow.co.uk website.  Muffins are soft and fruity, not too sweet and taste fresh even the next day.
Ingredients:
  • 250g plain flour
  • 1tbsp baking powder
  • 100g caster sugar
  • 75g chilled butter
  • 1 egg
  • 175ml milk
  • 150g fresh raspberries (or about 80g frozen)
  • icing sugar for sprinkling
Mix the flour, baking powder and sugar in a bowl.  Grate in the butter (or rub in with your fingertips into crumbly texture) and mix.
Beat the eggs with milk and add into dry mixture.  Mix carefully, do not over-beat.  Stir in the raspberries.  The mixture will be a little lumpy.
Spoon into the muffin cases and bake in preheated oven at 200C for 20-25minutes until golden brown and baked through.
Leave to cool, then sprinkle with icing sugar.
