I love white chocolate but combined with cranberries, amaretti biscuits, almonds and rose petals it makes something special, something that will always cheer you up !
Ingredients:
- 65g dried cranberries
- 3 tbsp cherry brandy or cherry vodka
- 40g toasted flaked almonds
- 6 amaretti biscuits
- 250g white chocolate
- 1 tbsp dried rose petals
Place dried cranberries and cherry brandy in a small bowl and leave to soak over night, drain off any leftover liquid the next day.
Melt white chocolate over a bain-marie and set aside. Crush amaretti biscuits into a large bowl, add half of the almond flakes and drained off cranberries, pour the chocolate over the mixture and stir until well coated.
Tip the mixture into an 18cm spring-form tin, make sure you line the bottom with baking parchment first. Sprinkle remaining almonds and rose petals on top. Leave in the fridge to set over-night or at lest for 4-6 hours.
