Spelt bread



I love using spelt flour in cakes and breads, it gives the unusual nutty flavour. Combined with seeds makes a delicious and healthy loaf. 

Ingredients:
  • 400g spelt flour
  • 1tsp salt
  • 1tsp dried yeast
  • splash of olive oil
  • 1tsp maple syrup
  • 300ml lukewarm water
  • 1tbsp poppy seeds
  • 1/2 cup mixed seeds (sunflower, pumpkin, linen seeds etc)
Combine all ingredients in a bowl, then mix until smooth.  Knead the dough by hand or in a stand mixer until stretchy and smooth. This should take about 10 minutes in a mixer or twice as long by hand. 

Transfer the dough into a greased loaf pan (20cm x 10cm)  and leave to rise about 60-80minutes. Sprinkle with some extra seeds.

Bake in a pre-heated oven at 200C for about 45 minutes, baked loaf should sound hollow then tapped underneath. 


Leave to cool.
