Those cookies smell incredible while baking and they are so yummy! Sweet honey, aromatic cinnamon and cloves and tangy orange zest.. They look very pretty too, but if you don't have a cookie stamp, you can cut out round cookies (or any shape you like) and simply bake them.
Ingredients:
- 250g plain flour
- 1 egg
- 110g cold, unsalted butter (cut into cubes)
- 1tbsp oil
- 1tsp cinnamon
- 1tsp mixed spice
- 1/4tsp ground cloves
- 85g icing sugar
- 2tbsp honey
- pinch of salt
- zest of 1 orange
Combine all ingredients in a bowl and rub with your fingertips, until the mixture resembles bread crumbs, then knead quickly until combined.
Shape into a ball, wrap in foil and chill in the fridge for about 60 minutes.
When the dough is chilled, roll it out on a floured surface to about 3mm thick and cut out circles, slightly bigger than your cookie stamp. Stamp each cookie.
Place on a baking sheet (you will probably need two, if baking in two batches, roll out half of the dough and keep the other half in the fridge).
Bake in a pre-heated oven 200C for 18-12 min.
Transfer to a cooling rack.
Enjoy!
