Spelt peach muffins




I have only made spelt muffins once before, with summer berries, they were absolutely delicious.  I knew I would make them again, as they are a lot healthier than usual muffins, they also stay fresh for longer and are so easy to make! So here we go: spelt peach muffins!


Ingredients (makes 10 large muffins):
  • 2 eggs
  • 270g vanilla yoghurt
  • 90ml vegetable oil
  • 1tsp vanilla paste or extract
  • 260g spelt wholemeal flour
  • 2tsp baking powder
  • 150g caster sugar
  • 1 1/2 cup fresh or canned peaches, roughly chopped
  • 1/2 tsp cinnamon
  • oats for sprinkling on top

Combine the eggs, yoghurt, oil and vanilla in a bowl and mix until just combined. 

In a separate bowl combine the flour, baking powder, cinnamon and sugar and add the wet ingredients.  Mix until combined, not too long, don't worry about any small lumps. 

Add peaches and stir,
  
Divide the mixture into 10 large muffin cases, sprinkle with oats and bake at 190C for about 25 minutes, until skewer inserted in the middle of a muffin comes out clean.


Leave to cool.
