Oat, cranberry and white chocolate cookies




One of my favourite cookies, with chewy and slightly sour cranberries and sweet chunks of white chocolate.  Oats give the cookies nice texture and make them taste a little like cereal bars.

Ingredients:
  • 2 eggs
  • 150g caster sugar
  • 1tsp vanilla paste or extract
  • 150g dried cranberries
  • 1 2/3 cup plain flour
  • 1 tsp bicarb. of soda
  • pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice
  • 250g soft, unsalted butter
  • 2 cups of oats
  • 100g white chocolate chips

Lightly beat the eggs with vanilla and cranberries and set aside.

Mix the flour with salt, cinnamon and soda.

Beat the butter with sugar until pale and fluffy, add the egg mixture and mix well.

Mix in the flour and oats.

Form balls (about 1 tablespoon of mixture each), place on the tray and press gently.

Bake at 180C for 10-12 minutes, leave to cool.
