Spiced ginger and cardamom cookies


This cookies combine strong flavours of cardamom and ginger with spicy chillies, aromatic cinnamon and nutty flavour of dark sugar.  They are perfectly balanced and not too sweet.  Slightly chewy with chunks of candied ginger- so yummy!

Ingredients:

For the cookies:
  • 2 cups of plain flour
  • 4 tsp ground ginger
  • 2 tsp bicarb. of soda
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 1 tsp ground cardamom
  • 3/4 tsp salt
  • 1/4 tsp chilli flakes
  • 1 cup candied ginger, chopped
  • 1 cup dark brown sugar
  • 3/4 cup soft, unsalted butter
  • 1 egg
  • 1/4 cup clear honey
To roll the cookies:
  • caster sugar
  • ground ginger

Beat the butter with brown sugar until fluffy, add an egg and honey and mix until combined.  Add all remaining 'cookies' ingredients and mix just until blended.  

Pre-heat the oven to 180C, shape walnut sized balls and roll in sugar mixed with ground ginger (3 tbsp sugar- 1 tsp ginger).  Place on a baking sheet, well apart and bake for about 12 minutes.  Leave to cool.
