Chocolate banana muffins


Soft and moist chocolate and banana muffins from Nigella's recipe.  Great way to use over-ripe bananas.  You could also add nuts or chocolate chips if you like.

Ingredients:
  • 3 very ripe bananas
  • 125ml vegetable oil
  • 2 eggs
  • 100g light brown sugar
  • 225g plain flour
  • 3tbsp cocoa powder
  • 1tsp bicarb. of soda
Sift the flour, cocoa powder and bicarb. of soda into a bowl and set aside.

Mash the bananas with a fork or a blender, then add oil, eggs and sugar and mix.

Combine both mixtures together.

Line a muffin tray and divide the mixture between 12 cases.

Bake in a pre-heated oven at 200C (I bake at 190) for 15-20 minutes.
