Strawberry ice-cream




Better than any shop-bought strawberry ice-cream! Delicious dessert for sunny days.. you can use fresh or frozen strawberries (those will need to be defrosted first).

Ice-cream can also be made without an ice-cream maker, you will then need to place ready mixture in the freezer and mix with an electric mixer every half an hour, until completely frozen, to break the ice crystals.


Ingredients:
  • 170g fresh strawberries
  • 1tbsp of lemon juice
  • 1/3 cup milk
  • 1/3 cup single cream
  • 1/3 cup caster sugar
  • 2 egg yolks
  • 1tsp vanilla paste

Blend the strawberries to a puree and add lemon juice, set aside.

In a medium saucepan warm up the milk, cream and vanilla, bring to a simmer.

Meanwhile whisk the egg yolks with sugar until pale and fluffy and add to the hot milk mixture.

Cook the mixture over low heat until thickened, stirring all the time.

When the mixture is thick enough to coat the back of a spoon, but still pourable, take off the heat and add strawberry puree.  Mix until combined.

Transfer the mixture into a bowl and leave to cool, then place in the fridge until chilled.

Pour the mixture into an ice-cream maker and leave until desired consistency.  Transfer to a container and keep in the freezer.
